Roasted Whole Chicken

Simple instructions for roasting a whole chicken:

Pat dry chicken inside and out using paper towels

Fold wings back

Place a small pat of unsalted butter inside chicken

Sprinkle salt, pepper and garlic inside chicken

Stuff with small amounts of sliced onion, apple, and lemon

Tie legs with kitchen string (optional)

Brush combination of unsalted butter and olive oil on outside of chicken

Sprinkle entire outside of chicken with salt, pepper, garlic and thyme (or other herb of choice)

Roast at 425 degrees for 30 minutes to an hour depending on size

Baste, cover and lower oven temp to 340 degrees

Chicken is done when internal temp reaches 180 degrees
